This layered low carb taco salad is a whole meal that does not disappoint. Who needs the taco shell when easy keto recipes like this are a great option to add all of your favorite toppings to your keto taco salad bowl without adding any extra muffin topping to your middle, if you catch my drift 😂

Taco Tuesday isn’t quite complete without a few low carb tortillas, low carb tortilla chips, or even adding a little extra crunch to your healthy taco salad with tortilla strips, am-I-right?

Meh – who needs the extra carbs anyway? Use keto beef tips like this for faster weight loss progress: keep this low-carb taco salad simple by layering sour cream mixed with homemade taco seasoning (or store bought will do in a pinch) … and top with healthy keto goodness until your heart is content.

I love my easy taco salad recipe to include wholesome ingredients like chopped romaine lettuce, cherry tomatoes and other favorite taco toppings like chopped green onions and cheddar cheese. I may even toss on a few black olives, chopped bell peppers, or a couple of fresh cilantro leaves to mix things up a little.

When it comes to the taco meat, steer clear of the ground turkey and lean ground beef options. The best part of a healthy keto taco salad is you need that flavorful fat to lose weight on a ketogenic diet!

That being said, grass-fed beef is always my #1 choice if finances permit. Even if it’s a stretch, a pound of ground beef that’s higher in quality will do so much more for your health than conventional meat that’s really only a step above that sketchy Mexican food from the Taco Bell drive thru.

Sorry drive thru friends … while you can lose weight with lazy keto, it just doesn’t have quite the same health gains as focussing on high quality foods that are also low in carbs. Net carbs can only do so much when it comes to weight loss on keto, mmm-kay?

Once you’re ready to brown ground beef, cook it over medium-high heat in a frying pan. While it’s browning, you can sprinkle it with a little garlic powder or even a little chili powder if you like to add a nice kick and make it a more zesty keto taco salad. Save the homemade keto taco seasoning til the end, once the beef is brown. Mix it in a small bowl and add it to the cooked ground beef. You’ll want to turn the stove down to medium heat to a nice simmer while you allow the seasoning and taco meat to combine.

But wait, I jumped ahead here. I seem to get overly excited when it comes to my keto salad recipes. 😂 There’s just so much deliciousness when it comes to keto recipes mixed with nutrient dense veggies, is all.

OK – while the taco meat is cooking, start meal prep on the fresh toppings.

You can add this to your super easy recipes list by going with pre-shredded lettuce from the grocery store (especially helpful on a busy day) … or get even more nutrients from and make a super healthy salad by taking time to chop up a nice spring mix lettuce or spinach for the taco salad base.

It’s up to you to choose to make a simple salad with simple ingredients, or to take your nutrition to the next level with a little extra elbow work on your part. You have complete control on how simple or complicated to make your keto recipes. Just stick with whatever will help you stick to keto long term!

As I briefly touched on at the beginning, mix the sour cream with the taco seasoning to make up the base of your low carb salad. This is a great recipe because you can avoid store bought salad dressings that typically contain less than ideal ingredients. (Here’s looking at you soybean oil 🧐).

(Except in the case of highly processed vegetable oils, we do)

It’s your choice if you want to serve this family style in a large bowl, or if you prefer to make smaller individual plates for easier access. Layer the sour cream mix, top with shredded lettuce, ground beef, shredded cheese and then devour the whole thing. OK – just kidding … you should probably share with your family too.

Ingredients

  • 1 lb ground beef
  • 1 + 1/2 oz taco seasoning
  • 3/4 cup water
  • 4 oz sour cream
  • 4 oz shredded cheese
  • 2 roma tomatoes, chopped
  • 1 small red onion, chopped
  • 1 bag shredded lettuce

Instructions

  • Brown ground beef in skillet
  • Once browned, stir in 1 oz taco seasoning and water. Bring to a boil, then reduce to simmer for 5-10 minutes. Allow ground beef to cool slightly.
  • Layer serving plate with sour cream. Stir remaining taco seasoning into sour cream.
  • Top sour cream with shredded lettuce, ground beef, and preferred taco toppings.

You can choose to serve this family style in a large bowl or to prepare separate plates.
