While I don’t particularly love using any kind of sweeteners in my low carb & keto recipes, at times it’s a necessary evil. I’ve attempted homemade BBQ sauces in the past and omitted the sweeteners … and let’s just say this is one sauce that really needs a little extra help, even when you’re used to not consuming a whole lotta artificial sweeteners in your normal diet.
OK – let’s chat about how easy this keto crockpot recipe is to throw together:
Always spray your crockpot with a nonstick cooking spray. It makes for such an easy cleanup, so why wouldn’t you do it? I don’t love canola oil based sprays because I don’t love pretty much any option that uses highly processed vegetable oils – so I tend to stick with a high heat coconut oil cooking spray.
Preheat your crockpot while you’re mixing the zesty BBQ sauce together. Mix together the BBQ sauce, Italian dressing and coconut aminos in a mixing bowl.
It takes a few extra minutes to make Italian dressing from scratch, but the health benefits are soooo worth it! It’s always better to ditch any dressings made from canola oil or other vegetable oils that keep you inflamed. Plus, the homemade version tastes. so. much. better.
Add the chicken to the crockpot. Season to taste with dried minced garlic and salt. You can add pepper here if you’d like – the reason I don’t is I’m allergic. Yes, it’s sad – but painfully true.
Once the chicken is seasoned and the sauce is combined, dump it over the chicken and let that crockpot mix all of those delicious flavors together for the next 6-8 hours.
Sure, you could cook this on high for only 4 hours … but why rush the process? Get a better tasting meal + a delicious smelling house by letting this cook on low.
Once 6-8 hours has passed, open that crockpot up and shred the chicken with two forks & serve.
Since this recipe doesn’t have a ton of fat, I sometimes allow a few tablespoons of butter to melt into the chicken while I shred it. It provides a delicious creamy flavor – plus, you’ll get more of that delicious fat you need for a successful keto diet!

- 3 lbs chicken breasts or thighs
- 12 oz low carb BBQ sauce
- ½ cup italian salad dressing
- 2 tbsp coconut aminos
- Minced garlic and salt to taste
- Non-stick cooking spray
- 1 tbsp garlic salt
- 1 tbsp onion powder
- 2 tbsp dried oregano
- 2 tbsp salt
- 1 tbsp dried parsley
- 1 tsp black pepper
- ¼ tsp dried thyme
- 1 tsp dried basil
- ½ tsp crushed red pepper (optional for a little kick)
- Spray crockpot with non-stick spray
- Preheat crockpot while you prepare chicken and sauce
- Layer chicken into crockpot. Season to taste with dried minced garlic and salt.
- Combine low carb BBQ sauce, homemade Italian dressing and coconut aminos in a bowl. Stir to combine. (You can replace coconut aminos with worcestchire sauce if you prefer)
- Pour sauce over chicken
- Cook on low heat 6-8 hours
- Shred with a fork once fully cooked and serve
How to Make the Dressing Mix:
Mix dry ingredients together in a mason jar or bowl. Store in an airtight container.
To make dressing, whisk together ⅔ cup olive oil, ¼ cup white vinegar and 2 tbsp of dry Italian dressing mix.
