Pretty much all keto bacon chicken recipes are a guaranteed keto dinner that the whole family will love, even if you have a picky eater. Even if the rest of your family doesn’t enjoy a keto lifestyle, this bacon bruschetta chicken dinner recipe makes a great low carb dinner idea. All you need to do is heat up an easy keto side for yourself (like green beans or cauliflower florets smothered in butter & garlic), and let the rest of your family dig in on this delicious keto chicken recipe.
First thing, gather all of the simple ingredients for the chicken since you’ll want to start there. Preheat the oven to 350 F and spray your casserole dish with non-stick spray for easy clean up. I like to use a coconut oil based spray on my baking dish for the health benefits, since canola based sprays are made of highly processed vegetable oils.
(Except in this case we do 😉)
After you place the chicken breasts into the dish, sprinkle them with Italian seasoning, garlic powder and salt. You may even choose to add other common ingredients like black pepper or onion powder to add your own mix of delicious flavor to this easy keto meal. Like a little kick? Red pepper flakes are the perfect way to spice this recipe up! The best part about keto cooking is you can use a variety of basic ingredients to make a recipe your own!
Another one of my favorite parts about keto cooking – even though this recipe card calls for baked chicken, you can easily cut cooking time in half with a quick chicken substitute. Don’t want to bake chicken from scratch? Use rotisserie chicken you picked up at the store. Don’t want to stick with boneless skinless chicken breast? Use chicken thighs instead. Want an easier meal you can just set and forget? Add some chicken broth to the slow cooker or instant pot since either option is a great addition to your easy keto recipes list.

OK – this time you’ve gone too far 😂 Unless of course you follow my easy keto chicken nuggets recipe and reheat these as another great low carb option for this recipe. Unfortunately most chicken tenders you find at the store have way too many grams of net carbs to qualify as keto, or even really to work in your low carb recipes.
While the chicken is baking, it’s time to put together the bacon bruschetta. I always find it easier to meal prep crispy bacon for the week ahead to use in other keto recipes like this since I hate cleaning up bacon grease. If you didn’t plan ahead, throw a few pieces of bacon into a frying pan and let it cook while you’re chopping the veggies for the bruschetta. If you opt to skip bacon all together, this is still a great recipe without it … but next time be sure to plan ahead since it adds a nice crunch.
Next, chop all of the veggies and combine with olive oil in large bowl. (Or use a smaller bowl if you make a smaller batch. I typically opt to make a double batch so I can use the bruschetta to top other low carb recipes the next day). Season with a high quality sea salt and add it to the top of the chicken once it’s ready to go!
The chicken is ready when it reaches an internal temperature of 165. For best results, you can use a meat thermometer to check, or just cut into the chicken breasts to see if the juices run clear.
I also included a balsamic glaze, which is tasty – but optional if you’re short on time. Also, it will count as an additional cost when it comes to carbs, so only add this sauce if you have a few grams of carbs to spare. I choose to leave keto sweeteners out of most of my recipes, but give the glaze a taste test to see if it’s sweet enough for you. If not, add in a little of your favorite keto sweetener.

Bacon Bruschetta Chicken
Here’s an easy & delicious way to have a refreshing meal that can make you feel full too! Did I mention it also looks very enticing? Look at those colors! This is perfect to bring to occasions and simple family gatherings – so tasty, they won’t even notice it’s ketogenic!

- 1 lb chicken breasts, sliced thin
- 3 tsp Italian seasoning
- Garlic Powder to taste
- Salt to taste
- Nonstick cooking spray
- 2 tsp minced garlic
- 3 tbsp olive oil
- 4 roma tomatoes, finely chopped
- ¼ red onion, finely chopped
- 4 tbsp chopped fresh basil
- 6–8 thick sliced of crisp bacon, crumbled
- ½ cup balsamic vinegar
- 2 teaspoons sweetener of choice (optional)
Preheat oven to 350 degrees
Spray baking dish with non-stick spray
Season chicken with Italian seasoning, garlic powder and salt
Bake in oven for 25 – 30 minutes, or until internal temp reaches 165 degrees
Prepare Bacon Bruschetta
While chicken is bacon, chop all ingredients for bacon bruschetta.
Combine chopped tomatoes, red onion, basil, bacon and olive oil in a bowl. Season with salt.
Once the chicken is ready, top each chicken breast with tomato mixture.
Prepare Balsamic Glaze
Prepare glaze while chicken is cooking
Combine sweetener and vinegar in a small saucepan over high heat and bring to a boil.
Reduce heat to low. Allow the sauce to simmer for 5-8 minutes, or until the mixture has thickened to a glaze.
Precook bacon and leave in the fridge until ready to use. I batch cook bacon to use in different recipes throughout the week.
Use leftover bruschetta to top recipes throughout the week. I love this bruschetta on top of eggs.
If you’d like to add a sweetener to the glaze, test out Swerve or Allulose. Be sure to count those carbs in your daily budget.
To lower carbs in the recipe, leave the glaze off completely.
