If you’re new to fat bombs, this is a great recipe to start with. You can put this no bake recipe together in just a few easy steps. Plus this low carb snack makes it easier to stick to keto. Who wouldn’t want amazing results while eating delicious keto-friendly desserts as snacks?

The first thing you’ll need to do is pull out the butter and cream cheese. Allow them to soften on the counter prior to mixing this fat bombs recipe together.

While you wait, choose your tool to allow these crustless keto cheesecake bites to firm up in the fridge.

Since the main ingredients in this recipe are thicker than other fat bombs, you have a few great options. One way is to line a mini muffin pan with mini muffin tins. The tins will help you avoid the cheesecake filling from sticking to the pan. A silicone mold is another great choice for cream cheese balls since they should pop right out. Finally, you could line a baking sheet with parchment paper and use your hands to form balls.

 

Combine the Healthy Fats

When the butter and cream cheese are ready, add them into a large mixing bowl with the almond butter. Use a hand mixer on medium speed to combine the ingredients together. The add the cream cheese mixture in one tablespoon increments into your tray of choice.

You can either roll these mini keto cheesecakes into balls with your hands, or just plop them down with a spoon. Ingredients

Scale
  • 4 oz cream cheese, softened
  • 4 tbsp butter, softened
  • 3 tbsp almond butter
  • 1 oz dark chocolate, 85% or higher

Instructions

  • Using hand mixer, mix cream cheese, butter and almond butter in a mixing bowl.
  • Line mini cupcake pan with mini cupcake liners.
  • Spoon mixture in 1 tbsp increments into liners. You can spoon directly into liners or form into balls with your hands.
  • Melt chocolate (toaster oven or stovetop preferred).
