Cheesecake is the perfect choice when your sweet tooth kicks into high gear. With a creamy filling, whipped cream topping, strawberry sauce drizzled over the entire slice, a crust made of graham crackers, and fresh berries decorating the plate – what’s not to love?
Well, all of the sugar in regular cheesecake that can single handedly destroy your low carb diet is a start.
That’s not the only thing since who’s got time to bake an entire cheesecake from scratch? And sure, you can pretend you’ll only have a little bit by cutting the cheesecake into individual slices, but we all know once you get a bite of the sweet stuff, you’re going to make that cheesecake your b… (ahem, this is a family friendly blog 😂)

Cheesecake Fat Bombs Make Sticking to Keto Easier
That’s the best thing about this easy low carb cheesecake recipe. It’s a great recipe since you can whip up a batch of keto mini cheesecakes and go back for seconds … perhaps even thirds. You can eat cheesecake bites all without the guilt associated with the real thing.

After a lifetime of yo yo diets, it’s important to eat more food. In the case of a keto diet, more food means more healthy fats. This includes the saturated fats found in these keto cheesecake bites. If you want your body to feel safe enough to let go of stored fat, you have to give it enough nutritional fat. Eating more fat is the top answer when it comes to the question about how to boost metabolism on keto.
I thought about going on a rant telling you to stop listening to anyone who tells you to eat 1,000 calories or less to lose weight, but that makes me angry. Why be angry when creamy cheesecake makes me so happy?
Instead, let’s spread the keto diet love and get into how to make this simple no-bake cheesecake fat bomb recipe.
How to Make A Low Carb Cheesecake Recipe
Combine the Fats
Before pulling out the tools to put this keto cheesecake recipe together, set the butter and cream cheese on your counter. Allow these ingredients time to come to room temperature.
You could choose melted butter, but this recipe is easier when you allow both of these ingredients to soften by sitting out on the counter for at least an hour. If you haven’t set these out yet, I’ve got plenty more keto rants you can read while you wait. Or you can start working on this recipe by lining the mini muffin pan with mini paper cupcake liners. Completely your choice.
Once the cream cheese is soft, beat it in a mixing bowl with a hand mixer. Continue to beat until the cream cheese is light and fluffy. To avoid a big mess, start with a low speed and increase it slowly.
Next, add the softened grass-fed butter, coconut oil, and vanilla extract. Mix until well combined. While you could use an electric mixer or food processor for this step, I like to keep things simple with an easy to store hand mixer.
Keep in mind, I live in Arizona. This means the warm weather leaves coconut oil that is always soft. If you live in an area where coconut oil turns rock solid, you may need to soften it. If that’s the case, melt coconut oil in a small saucepan on the stovetop over medium heat.
Please don’t throw it into a small bowl and toss it in the microwave. While I don’t have time for another rant, the microwave destroys the nutrients in healthy fats like coconut oil. Just wait the extra 60 seconds melting it on the stovetop takes.
Check the Cheesecake Batter
Once blended together, taste the filling for this keto no bake cheesecake recipe. I’m a bit of a low carb outlier in that I prefer sweetener free desserts. I don’t add any sugar-free sweetener like stevia glycerite to recipes. I gave up all added sweeteners a few years ago. Ditching most keto sweeteners makes weight loss easier. Weaning off keto-friendly sweeteners can help you avoid cravings for more sweets.

Many low carb cheesecakes call for sweeteners with erythritol, like Swerve. This can lead to a cooling effect after you eat a keto dessert. That’s not always a bad thing since I enjoy this sensation after trying Swerve in keto treats. I do not enjoy all of the gas cramps later in the day that sugar alcohols often cause.
Having the ability to digest what you eat is another rant all together. Again, cheesecake makes you happy. Don’t ruin your happiness by adding sweeteners with sugar alcohols if you too display problems digesting them.
Another important thing if you decide on Swerve is to count total carbs. Quit focussing on grams of net carbs on a keto diet. Counting net carbs often leads to a weight loss stall for many struggling ketoers, so it’s better to count total carbs.
Hopefully you decide against adding sweeteners in at least this recipe. I promise cheesecake bites taste really good without it. The sooner your palate adjusts to less sweetened foods, the easier following a real food keto diet becomes.
Mold into Cheesecake Fat Bombs
The next step is to spoon the cheesecake mixture into the lined mini muffin tins. Drop the batter into the tins in 1 tablespoon increments. You may need a rubber spatula to scrape every last drop from the bowl. Or just use your fingers to clean up any leftovers, not that I’ve ever licked a bowl clean like that 😂
Place the muffin tray in the freezer until firm. This usually takes 20-30 minutes. Once firm, remove the fat bombs from the tray and store them in a Ziploc bag. It’s your choice if you want to store these in the freezer or fridge. They’ll last longer when stored in the freezer. I keep mine in the fridge since a batch never lasts longer than a week.

Cheesecake Fat Bombs
A creamy cheesecake fat bomb with only 4 ingredients and no added sweeteners.
