On average, a one ounce serving contains 84 calories, 8 grams of fat, and 1 gram of carbs. Always check the nutrition label for added sugars since some brands can vary on the carb count.
If you really want to make the best cheesecake fat bombs, look for an organic cream cheese that doesn’t contain harmful ingredients, like carageenan. Also look for a full fat cream cheese since higher fat foods work better on keto.
How to Make Cheesecake Bites
Prep Work
This fat bomb recipe is easy with a few basic steps upfront. Start by setting the butter and cream cheese on the counter to allow them to come up to room temperature before making creamy cheesecake bites.
These healthy fats blend together best after they have a chance to soften.
Speaking of soft, the coconut oil doesn’t mix well if you live in a climate where it’s rock solid. You may need to melt it in a small saucepan if it’s too hard to mix with the other fats.
While you wait for the fats to soften, line a mini cupcake pan with mini cupcake liners. If you don’t have a mini muffin pan, you can also line a baking sheet with parchment paper to form the cheesecake balls. A silicone mold works for this recipe too.
Combine the Fats
Once the cream cheese is soft, beat it in a large mixing bowl with an electric mixer. Beat until the cream cheese is light and fluffy for the best texture for your low carb cheesecake bites. To avoid a big mess, start with a low speed and increase slowly.
Next, add the softened butter, coconut oil, and vanilla extract. Blend the cream cheese mixture with a hand mixer until well combined.
Taste the Cheesecake Filling

The next step is to spoon the cheesecake mixture into lined muffin tins.
Drop the batter into the tins in 1 tablespoon increments until all of the batter is distributed evenly.
You may need a rubber spatula to scrape every drop of the bite size cheesecake goodness from the bowl. Or maybe use your fingers to clean up any leftovers – not that I’ve ever licked a bowl clean like that 😂
Finally, place the tray in the freezer until firm. This usually takes 20-30 minutes. Once firm, remove the fat bombs from the tray and store in an airtight container. I store mine in a Ziploc bag in the fridge.
If you don’t plan to devour the batch within a week, store the leftovers in an air-tight container in the freezer.
