An easy way to stick to a keto diet is with simple recipes you actually crave. Busy weeknights call for easy low carb recipes that take less than 15 minutes from start to finish. Loaded cheesy cauliflower rice is a low carb comfort food that will make you forget you’re on a diet.

Loaded Cheesy Cauliflower Rice Ingredients
This delicious side dish is filled with simple ingredients you can easily find at any grocery store.
The main ingredients include riced cauliflower, chopped bacon bits, cream cheese, heavy cream and butter. To season this low carb side dish, I use a little minced garlic, onion powder, and salt and black pepper to taste.
Riced Cauliflower
When it comes to riced cauliflower, this recipe can be as simple as you want to make it. You can use frozen cauliflower rice found at the store, or rice your own cauliflower to make up a batch of fresh cauliflower rice.

Notice I used the word organic in that last sentence. While it’s tempting to grab a bag of Green Giant veggies, filling your body with the highest quality ingredients you can afford is important when it comes to bringing inflammation down on a keto diet.
I buy organic riced cauliflower from Trader Joe or Costco. Since cauliflower falls on the Clean 15 list, use the conventional kind if that’s all you can find.
Bacon
When it comes to bacon recipes on a ketogenic diet, that’s one place you shouldn’t skimp. While it’s easy enough to pick up a bottle of Bacos and call it a day – that’s not my favorite way to lose weight on a low carb diet.
In fact, products like Bacos don’t contain ingredients that even resemble real food. Instead you get a mix of defatted soy flour, partially hydrogenated soybean oil, Red 40 and hydrolyzed vegetable protein. Do these sound like ingredients that belong in your body?
If you say yes, you’ve got a lot of learning to do!
Unfortunately there’s no great substitute for the real thing on a keto diet. The best recipe you can make involves taking that extra step and using a real, high quality bacon.
If you’re in a hurry and don’t have time to fry up a fresh batch of bacon every time you put together a keto meal, then add it to your weekly keto meal prep. Cook a large batch of bacon on a griddle and store leftovers in an airtight container to use throughout the week. Staying prepared is one of the best things you can do to stick to keto.
Heavy Cream and Cream Cheese
After reading those last two sections, it’s probably no surprise I also advocate for organic heavy cream and grass-fed butter in keto recipes.
The truth is, you get far more nutrients and far less toxins from organic dairy than you do from the conventional variety. Organic dairy is also guaranteed to be antibiotic-free. Why eat products from sick cows when you can pay a little extra to improve the quality of your food?
How to Make Loaded Cheesy Riced Cauliflower
If you’ve tried any of my other cauliflower rice side dishes, you may have noticed they all start the same. But they’re all delicious, so why ruin a good thing?
First, melt butter in a skillet over medium heat. Once the butter melts, stir in the minced garlic. Stir with a wooden spoon until the garlic lightly browns. This should take 2-3 minutes.
Then, stir in the riced cauliflower. Turn the heat up to medium-high heat. Cook until the cauliflower is fully cooked, but not mushy. This should take 5-10 minutes. Stir occasionally while the cauliflower rice cooks.
Next, reduce the heat. Stir in the sauce ingredients, which include cream cheese and heavy cream. Combine well and then add in the bacon bits and onion powder. Stir again and cook on low heat until the cream cheese melts. This should take approximately 2 minutes.
Season with salt and pepper to taste while the ingredients blend together. Stir occasionally to combine everything well.
Once the ingredients are well combined, remove from heat. Garnish with diced green onions and serve.
The Easy Cheesy Cauliflower Rice Wrap Up
Ditch real rice on a low carb diet since it’s way too high in net carbs. Luckily cauliflower rice is a versatile keto side dish that goes well with nearly any main dish. Make your riced cauliflower even more delicious with this loaded cheesy cauliflower rice recipe.

- Β½ cup bacon bits
- ΒΌ cup green onions diced

Instructions
