Loaded Cheesy Cauliflower Rice

A loaded cheesy cauliflower rice that’s perfect for a keto diet.


  • 10 oz bag cauliflower rice
  • ½ cup bacon bits
  • ¼ cup green onions diced
  • 2 tbsp butter
  • 2 tsp minced garlic
  • 8 tbsp full fat cream cheese
  • 3 tbsp heavy cream
  • ½ tsp onion powder
  • Sea salt
  • Black pepper


  • Melt butter over low heat in a large skillet.
  • Stir in minced garlic. Cook over medium heat for 2-3 minutes until garlic lightly browns.
  • Stir in riced cauliflower. Cook until tender but not mushy, approximately 5 – 10 minutes. Stir as you cook.
  • Reduce heat to medium-low and stir in cream cheese, heavy cream, bacon bits and onion powder. 
  • Stir over medium-low heat until cheese is melted; approximately 2 minutes.
  • Season with salt and pepper to taste. Garnish with diced green onions.
