It’s important to really dig into the nutrition label since many commercial brands claim they use these oils, but they mix cheaper oils into their blends as well. If you don’t love either of these options, you could also replace the mayo completely in this keto chicken salad. Opt for a greek yogurt that’s low in carbs instead.
How to Make Chicken Bacon Avocado Salad
This healthy chicken salad recipe is great for busy weeknights since you can set it in the crockpot and forget about it until you’re ready to put the recipe together.
Prepare the Chicken
Start by spraying a crockpot with nonstick spray. Then heat the crockpot on low.
Before adding the chicken to the crockpot, season both sides with pepper and garlic powder. Then add the chicken into the crockpot in a single layer.
Next pour the chicken broth into the crockpot. This will give your shredded chicken extra flavor.
Cover and cook for 6-8 hours on low.
If you’re in a hurry, you can cook this on a high setting for 3-4 hours. Your chicken may not be quite as tender, but this shortcut still makes a delicious chicken salad.
Once the chicken is fully cooked, shred it into small pieces. You can use two forks to shred chicken, or even use a hand mixer for quicker shredding. Either chicken procedure gets the job done.
Then, place the chicken in the fridge. Allow it to cool for at least 30 minutes.
Meal Prep Salad Ingredients
While the chicken cools, you can get the rest of the ingredients ready.
If you didn’t cook the bacon ahead of time, you can do that now. Throw a few slices of bacon into a large frying pan and cook on medium-high heat until the bacon reaches your desired level of crispness.
If you cook the bacon pieces in a frying pan, use a splatter screen to protect yourself from the grease. When I cook a large batch of bacon for meal prep, I use this large bacon griddle. It makes cooking a large batch of bacon simple.
Once the bacon is crispy, allow it to cool on a plate lined with paper towels. The chop into crumbles with a sharp knife.
You’ll also want to chop the fresh avocados and onions. I love the flavor and color that red onions add to this salad, but feel free to use sweet Vidalia onions too. Diced green onions are a great addition to this recipe as well.

Once all of the ingredients are chopped, add them into a large mixing bowl. Then add in the mayo, spices, lime juice, and cooled chicken.
Use a large wooden spoon to combine all of the ingredients together. While the chicken broth gives this meal a good flavor, you may choose to add a little extra salt to the salad. Start with a small amount so you don’t overdo the saltiness.
