Salty nuts pair well with melted chocolate, but if you go with the traditional milk chocolate covered almonds – that’s not keto compliant. Swap this high sugar favorite for a rich organic dark chocolate, melted butter and almonds. Now you have a keto treat with plenty of healthy fats that’s also low in total carbs.
Chocolate butter almonds are one of my favorite fat bombs. Sure, these homemade keto almond clusters require a little time spent in the kitchen – but the health benefits that come with food prepared from scratch are endless!

Chocolate Butter Almonds Ingredients
This dark chocolate keto friendly recipe only has four ingredients. That means I’ll spend more time in this blog telling you what not to use than talking about the ingredients you need.
When I get to my sweetener rant, as I tend to do in fat bomb blogs, don’t roll your eyes and click away. It all stems from healthy fat love … and from me wanting you to get your best weight loss results on a low-carb diet.
The main ingredient in this fat bomb recipe is almonds. When gathering what you need, go with whole almonds as opposed to slivered almonds. Look for raw almonds that haven’t been roasted in unsaturated oils like sunflower or canola oil.
The next main ingredient is butter. I need to be clear that you always want to use real butter on keto. Many margarine based products attempt to disguise themselves as butter. If the butter product you buy has any ingredients listed other than cream and salt, put it back. The butter-like products filled with highly processed unsaturated fats will destroy your health, no matter how low in carbs they are.
Rounding out the ingredients for chocolate butter almonds are the dark chocolate and vanilla extract. While many use cocoa powder mixed with sweeteners, I choose to melt down dark chocolate bars for fat bomb recipes. And I don’t mean the “unsweetened chocolate” that’s really sweetened with stevia or monk fruit extract, mmmkay?
A Word On Keto Friendly Sweeteners
All of the fat bomb recipes in the land instruct you to use sugar free chocolate chips. You’re told don’t worry about the carbs these products add. It’s like magic. Forget about the blood sugar effects. Only look at the net carbs! Focus on net carbs. (Hopefully you too hear Wizzo the Clown chanting “Doody doody do” when you read that last part).
These recipes talk you out of a delicious dark chocolate bar as a fat bomb base because of added sugars. While I agree you shouldn’t overdo sugar, I prefer a tiny bit of natural sugar over sugar-free chocolate products. I feel this way for a few reasons.
First, counting net carbs can lead to a weight loss stall. Counting net carbs in foods marketed as keto friendly means nothing if your body counts all of the carbs. At least with real sugar, you know where you stand. You can’t eat a lot and remain in ketosis. There’s no excuse to go overboard.
Second, your body understands how to process real sugar. When it comes to sweeteners made in a science lab, your body doesn’t view these as fuel since your body understands real food. It stores most food-like products in fat cells until the coast is clear. When you eat too many food-like products labeled keto-friendly, the coast is never clear.
I’m not saying you won’t lose weight with artificial sweeteners. You absolutely can! I absolutely did! But I noticed less cravings and better results once I ditched keto friendly sweeteners.

How to Make Chocolate Butter Almonds
First, line a mini muffin tray with mini muffin liners. Then melt the chocolate and butter together over medium heat in a saucepan. Stir on occasion with a whisk.
Once melted, set aside to cool. Then whisk in the vanilla extract and combine well.
Next, pour in the almonds. Stir to combine. Add a light dusting of sea salt if you prefer a salty chocolate flavor. This also helps reduce the bitterness of dark chocolate if your palate hasn’t quite adjusted from milk chocolate yet.
Add the chocolate butter almond mixture to the mini muffin pan in 1 tablespoon increments. Place in the freezer until firm, which takes approximately 20 minutes. You can also allow them to firm up in the fridge. They will take a little longer to set with this method.
Once firm, store the low-carb chocolate fat bombs in an airtight container in the freezer or fridge. I usually keep mine in a resealable Ziploc bag.

Sometimes all you need to get results on a keto diet is to add a little bit of healthy fat to your plan. This easy recipe is a great way to help with sweet cravings, while also getting enough fat to help you finally get into ketosis!
Unfortunately too many people learn to eat the bare minimum when it comes to fat … which means you’ll never experience all of the health benefits of being in ketosis. While it’s true carb intake needs to remain low to lose weight with keto, it’s also true that limiting fat on keto can lead to a weight loss stall.

Ingredients
- 2 cups almonds
- 6 tablespoons butter

Instructions
- Line mini muffin tray with mini muffin tins (recipe makes 24)
