Simple Ingredients for Cilantro Lime RiceΒ
The best way to stick to a keto diet is to pack your meal plan with quick and easy recipes. If you’re not a fan of cauliflower, this low carb side dish just might change your mind. Since starting keto, cauliflower rice has become one of my favorite foods. It’s by far the easiest way to replace white rice in keto recipes.
When gathering the ingredients, you have a choice to make. You can either start with a head of cauliflower to grate your own cauliflower rice, or you can make this an easy recipe with riced cauliflower found in the freezer section in grocery stores.
As a busy mom of two young boys, I choose easy. While using a box grater and fresh cauliflower doesn’t take too much extra time, I prefer to buy riced organic cauliflower from Costco. This convenience makes cauliflower rice recipes easy. When you keep things easy, you tend to keep at it.
Other ingredients for this recipe include fresh cilantro and green onions.
You’ll also need lime juice. This is usually best from fresh limes, but I won’t lie and say I haven’t used lime juice from a bottle when it’s all I have on hand.
Rounding out the full list of ingredients are coconut oil, coconut aminos, and sea salt. If these aren’t already staples in your keto pantry, they should be. These are among the most used ingredients in my keto recipes.
How to Make Cilantro Lime Cauliflower Rice
The entire recipe takes less than ten minutes to make. That’s less time than it takes to hit up your favorite Mexican takeout place. You’ll save time and money, plus get added health benefits, when you incorporate side dishes like this into your low carb plan.
Start by chopping the veggies.
If you choose fresh cauliflower, grab a medium head of cauliflower and grate the whole thing into a rice-like texture. I suppose you could also grate cauliflower florets, but this may take a long time compared to using the whole thing. Or I could just be talking out of my you-know-what since I’ve always chosen the riced version.
Next, chop the cilantro and dice the green onions. Set aside.
In a large skillet, melt the coconut oil over medium-high heat. Use enough to cover the bottom of the skillet. Once the oil is hot, reduce to medium heat and add the cauliflower rice. Cook until the rice is tender, which should take approximately five minutes. Stir on occasion.
Then, pour the coconut aminos over the rice. Stir for an additional 2 minutes.
Reduce to low heat and stir in the green onions, cilantro, lime juice and salt. Combine everything well and serve.
The Cilantro Lime Cauliflower Wrap Up
If you miss regular rice on keto, Mexican cauliflower rice is my favorite way to feel like I’m cheating. The best part is I still lose weight because cauliflower rice recipes are low in carbs while being high in flavor! I’d even say this recipe tastes very similar to your favorite rice recipe, minus the excess carbs!

Ingredients
- 1 bag riced cauliflowerΒ (If rice your own, use 1 medium head of cauliflower)
- A half cup of cilantro, chopped
- 1 cup green onions, diced
- Coconut oilΒ (2-3 tbsp or enough to cover bottom of skillet)
- 2 tablespoons lime juice
- 2 tablespoons coconut aminos
- Sea salt (to taste)
Instructions
- Melt coconut oil over medium-high heat in a large skillet
- Once melted, turn heat down to medium. Add riced cauliflower. Cook until tender, or approximately 5 minutes
- Mix in coconut aminos. Cook for 1-2 minutes
- Remove from heat. Stir in diced green onions, cilantro, lime juice and salt.
