Cilantro Lime Cauliflower Rice

An easy keto side dish for any of your low carb Mexican favorites!


  • 1 bag riced cauliflower  (If rice your own, use 1 medium head of cauliflower)
  • A half cup of cilantro, chopped
  • 1 cup green onions, diced
  • Coconut oil  (2-3 tbsp or enough to cover bottom of skillet)
  • 2 tablespoons lime juice
  • 2 tablespoons coconut aminos
  • Sea salt (to taste)


  • Melt coconut oil over medium-high heat in a large skillet
  • Once melted, turn heat down to medium. Add riced cauliflower. Cook until tender, or approximately 5 minutes
  • Mix in coconut aminos. Cook for 1-2 minutes
  • Remove from heat. Stir in diced green onions, cilantro, lime juice and salt.
