Easy Buffalo Crockpot Chicken Recipe | Low Carb and Keto Friendly

One of the first keto recipes that became a staple on my low-carb diet is this buffalo crock pot chicken recipe. It’s one of the easiest 5 ingredient keto keto recipes I make. Even mentioning 5 ingredients makes it seem more complicated than it is since two of the ingredients are spices.

This keto crock pot recipe is perfect for busy weeknights since it takes only a couple of minutes to prepare. Let it simmer on while you’re at work, and you’ll have a delicious slow cooker meal by the time you get home.

Is Buffalo Sauce Keto?

If you like spicy, a keto buffalo sauce recipe is the perfect way to heat up your meals. However, some classic buffalo wings sold at restaurants like Buffalo Wild Wings aren’t the best option for a keto diet. This is the case when the hot wings are breaded, or when the wing sauces contain sugar.

You’ll know if a buffalo wing sauce is keto-friendly by the other ingredients listed in the sauce. Sauces like Sweet BBQ or Honey Garlic aren’t your best options.

Getting traditional wings at a restaurant with a basic mild or hot sauce can work for a low carb diet. However, I won’t lie and say this is one of my favorite things to get the best results on keto.

When you order low carb chicken wings to go, this is definitely a dirty keto kind of meal. This is mostly because the wings are fried in undesirable oils that cause inflammation. Plus, the blue cheese dressing or ranch dressing presented with the wings is usually made with canola oil. This is one of the most inflammation causing oils in all the land.

Is a keto buffalo wings night out a big deal every once in a while? Probably not – but that’s only the case if you really keep it to every once in a while. If you need a keto buffalo chicken wings fix more often than that – try this crock pot chicken recipe with homemade buffalo sauce instead!

 

Crock Pot Buffalo Chicken Ingredients

The ingredients for this recipe are simple. You can choose chicken breast or thighs for the recipe. For best results on keto, it’s a good idea to stick with the highest quality meat you can afford since conventional meats contain more toxins. The sauce is made up of hot buffalo sauce and melted butter. I keep this recipe simple with Primal Kitchen’s Buffalo Sauce. I previously used Frank’s Redhot Buffalo Wings Sauce, but was saddened to find out they add canola oil to their sauces.

Some spices to complete the low carb buffalo sauce recipe are garlic powder and black pepper. Of course you can make this your own sauce by adding other spices you enjoy.

Like it really spicy? Add a dash of cayenne pepper. Other flavors like parmesan or lemon pepper are also a delicious way to mix this easy keto sauce up a little bit. Most of these mix-ins add zero carbs to an already very low carb meal.

Since this recipe is so low in grams of carbs per serving, I like to mix the sauce up with a low sugar BBQ sauce to give it even more flavor.

 

How to Make Keto Buffalo Crock Pot Chicken

To keep clean up minimal, start by spraying your crock pot with a nonstick cooking spray. Coconut oil spray is my favorite when it comes to keto cooking since I aim to avoid vegetable oils at all costs! Once sprayed, preheat the crockpot on a low setting while you prepare the chicken and sauce.

Melt the butter over low heat in a small saucepan. As the butter melts, stir in the Frank’s Hot Sauce. Add any additional seasonings or flavors you prefer to the sauce.

Next, season the chicken to taste with garlic powder and black pepper. Flip the chicken so you season both sides. Then add the chicken to the crockpot in a single layer. Pour the sauce mixture on top of the chicken. Cook on low heat until the chicken is cooked thoroughly. This usually takes 7-8 hours. If you’re in a rush, you can reduce the cook time to only 3-4 hours by heating the crock pot to high heat.

Once the chicken is fully cooked, shred it with two large forks. Alternatively, you can use a hand mixer to quickly shred the chicken. This takes a little less elbow grease on the front end – but more clean up work on the back end … so choose where you want to put the effort into this easy recipe.

Serve immediately and store leftovers in an airtight container.

 

The Buffalo Crockpot Chicken Wrap Up

If you love spicy meals, this is a great recipe to add to your keto meal plan. The recipe is hefty enough to feed a large family, or leaves plenty of leftover buffalo chicken for later in the week.

This is one of my favorite foods to reheat for lunch. I add green onions, sour cream, and diced tomatoes to make chip-less keto nachos. It’s also a great topping to turn a side salad into an easy keto meal. Serve it with homemade ranch dressing.

Ingredients

Scale
  • Two pounds chicken breasts or thighs
  • 12 ounces buffalo sauce
  • 4 – 8 tablespoons butter
  • Powdered garlic
  • Black pepper
  • Non stick cooking spray  (I use Spectrum Coconut Spray Oil from Thrive Market)

Instructions

  • Spray crock pot with non stick cooking spray
  • Season boneless chicken thighs or breasts with garlic powder and black pepper on both sides
  • Place chicken into crock pot and pour buffalo sauce over chicken
  • Cook on low for 7-8 hours or high for 3-4 hours
  • Once cooked, add in butter
  • Allow butter to melt as you shred chicken with two large forks  (alternatively, you can try shredding chicken with a hand mixer)
  • Stir and serve with your favorite toppings  (Mine include red onions, avocado and ranch)
