My Favorite Keto Bacon Chicken Recipe
Even if the rest of your family doesn’t enjoy a keto lifestyle, this bacon bruschetta chicken dinner recipe is a great low carb dinner idea. Heat up an easy keto side for yourself, like green beans or cauliflower florets smothered in butter & garlic, and let the rest of your family dig in on this delicious keto chicken recipe.

How to Make Bacon Bruschetta Chicken
First thing, preheat the oven to 350 F. Then gather all of the simple ingredients for the chicken so you have everything ready to go.
Next, spray a casserole dish with a non-stick spray for easy clean up. I like to use a coconut oil based spray on my baking dish for the health benefits. Canola based sprays are made of highly processed vegetable oils, so steer clear of this version.

Spice Up the Chicken
After you spray, place the chicken breasts into the dish. Then sprinkle them with Italian seasoning, garlic powder, and salt. You may even choose to add other common ingredients like black pepper or onion powder. Have fun and add your own mix of delicious flavors to this easy keto meal.
Like a little kick? Red pepper flakes are the perfect way to spice this recipe up! The best part about keto cooking is you can use a variety of basic ingredients to make a recipe all your own!

One Keto Chicken Recipe Made Different Ways
Another one of my favorite parts about keto cooking is the versatility when it comes to recipes. Even though this recipe card calls for baked chicken, you can easily cut cooking time in half with a quick chicken substitute.
Don’t want to bake chicken from scratch? Use rotisserie chicken you picked up at the grocery store. Don’t want to stick with boneless skinless chicken breast? Use chicken thighs instead. Want an easier meal you can just set and forget? Add some chicken broth to the slow cooker or instant pot since either option is a great addition to your easy keto recipes list.
This easy keto chicken dinner is even more delicious when you opt to cook the chicken in an air fryer. The outside of the chicken is nice and crispy, while the inside stays juicy.
What about chicken tenders? OK – this time you’ve gone too far π

Unless of course you follow my easy keto chicken nuggets recipe. You can make these ahead of time and reheat these spiced chicken nuggets as another great low carb option for this recipe.
Don’t settle for chicken tenders you find in the frozen section. Unfortunately most chicken nuggets from the store have way too many grams of net carbs to qualify as keto. Always make your own homemade breading when it comes to chicken nugget low carb recipes.
Basically, there is no one best way to cook chicken on keto. Once you choose the type of chicken you want to work with, add it to the oven, or other preferred cooking method, and move onto the bruschetta.
If baking, the chicken is ready when it reaches an internal temperature of 165. For best results, you can use a meat thermometer to check, or just cut into the chicken breasts to see if the juices run clear. But it will take at least 25 – 30 minutes to cook, so let’s move onto the next step of this recipe.
Keto Bacon Bruschetta
While the chicken is baking, it’s time to put together the bacon bruschetta.
I always find it easier to meal prep crispy bacon for the week ahead to use in other keto recipes like this. I hate cleaning up bacon grease, so batch cooking makes keeping bacon in my keto plan easy. Batch cooking bacon once per week is easy if you have a bacon griddle. Store it in an airtight container to reuse throughout the week.
If you didn’t plan ahead, throw a few pieces of bacon into a frying pan and let it cook while you chop veggies for the bruschetta. If you opt to skip bacon all together, this recipe is still great without it. Next time be sure to plan ahead since chopped bacon adds a nice crunch.
Next, chop the veggies. Once chopped, add them to a large bowl and pour the olive oil on top. Stir well to combine.
I use a large bowl since I always make a double batch of bacon bruschetta. It’s great to have leftover bruschetta to use in other meals throughout the week. Feel free to use a smaller bowl if you make a smaller batch.
If you do make a double batch, the bruschetta goes great with scrambled eggs. I make easy keto scrambled eggs, top them with a low carb barbeque sauce, and then top the egg recipe with bruschetta.
You can also save it to use with another chicken or fish recipe you make later that week. While using the bruschetta to top bread isn’t an option on keto, I also bet this would be great if you make keto cheese chips and used those to scoop the bruschetta up as a dip.
Once the veggies are combined with the olive oil, season the mixture with a high quality sea salt. Set aside or store covered in the fridge while the chicken is baking.
Keto-Friendly Balsamic Glaze
I also like to drizzle a balsamic glaze on top of the chicken. The glaze makes this chicken bacon recipe extra tasty, but it is optional if you’re short on time. Since this is a keto lifestyle blog, it’s also important to note the glaze will add a few extra carbs to the meal. Only add this sauce if you have a few grams of carbs to spare.
Another important keto blog note: I leave keto-friendly sweeteners out of most of my recipes, and this one is no exception. Be sure to give the glaze a taste test to see if it’s sweet enough for you. If not, you can add in a little of your favorite keto sweetener.

A Note About Keto-Friendly Sweeteners
While the story of why I no longer use low-carb sweeteners in keto recipes is a long one, you can learn all about why I quit keto sweeteners for good. I want to make it clear that I lost more than 100 pounds keeping ALL of the sweeteners in my keto meal plan. These include sweeteners like stevia, Swerve and monk fruit.
A few years ago I decided to test removing most artificial sweeteners from my keto diet. Even though I initially lost the weight with them in my plan, I found myself regaining a few pounds. I also began craving more carbs that I previously did while losing weight with keto. Once I took them out, my keto lifestyle was easier to stick with for the long term.
It does take time for your taste buds to adjust. We typically recommend that our students wean themselves off of keto-friendly sweeteners over time. If you try to remove all of the sweet stuff all at once, that can also make keto harder to stick with.
Many of our students enjoy a keto lifestyle much more once they almost completely remove artificial sweeteners. Try weaning yourself off of sweeteners if you feel like they are holding your weight loss results back. Be sure to come back and let me know if you feel a difference.

This is by far one of my favorite recipes that combines both chicken and bacon. This Lazy Keto Gourmet will admit that this recipe does take a little more meal prep time than most, but the end result is completely worth it!

Ingredients
Chicken
- 1 lb chicken breasts, sliced thin
- 3 tsp Italian seasoning
- Garlic Powder to taste
- Salt to taste
- Nonstick cooking spray
Bacon Bruschetta
- 2 tsp minced garlic
- 3 tbsp olive oil
- 4 roma tomatoes, finely chopped
- ΒΌ red onion, finely chopped
- 4 tbsp chopped fresh basil
- 6–8 thick sliced of crisp bacon, crumbled
Glaze (optional)
- Β½ cup balsamic vinegar
- 2 teaspoons sweetener of choice (optional)
Instructions
Prepare Chicken:

Preheat oven to 350 degrees

Spray baking dish with non-stick spray

Season chicken with Italian seasoning, garlic powder and salt

Bake in oven for 25 – 30 minutes, or until internal temp reaches 165 degrees
Prepare Bacon Bruschetta

While chicken is bacon, chop all ingredients for bacon bruschetta.

Combine chopped tomatoes, red onion, basil, bacon and olive oil in a bowl. Season with salt.

Once the chicken is ready, top each chicken breast with tomato mixture.
Prepare Balsamic Glaze

Prepare glaze while chicken is cooking

Combine sweetener and vinegar in a small saucepan over high heat and bring to a boil.

Reduce heat to low. Allow the sauce to simmer for 5-8 minutes, or until the mixture has thickened to a glaze.
Tips:

Precook bacon and leave in the fridge until ready to use. I batch cook bacon to use in different recipes throughout the week.

Use leftover bruschetta to top recipes throughout the week. I love this bruschetta on top of eggs.

If youβd like to add a sweetener to the glaze, test out Swerve or Allulose. Be sure to count those carbs in your daily budget.

To lower carbs in the recipe, leave the glaze off completely.
