The sweet roast beef sauce for this keto crock pot roast is made up of balsamic vinegar, coconut aminos, minced garlic, and oregano.

While you may be shocked to find balsamic vinegar as an ingredient for a keto roast beef recipe, it’s used to flavor the meat. This means very little of the carbs actually transfer to your plate when making a slow cooker pot roast with balsamic vinegar.

If you’d like more flavor after cooking roast in crock pot, you can pour extra balsamic sauce over your serving of meat. Just keep in mind, adding too much sauce adds extra carbs to this low carb recipe. If you don’t have many total carbs leftover for the day, just go with the flavor already soaked into the tender meat. This balsamic crock pot roast tastes amazing, even without extra sauce.

The final ingredient you need is coconut oil to brown the meat. A non-stick cooking spray also comes in handy for easy clean up.

Even though this step isn’t completely necessary for this recipe to work, don’t skip it. Browning the meat first makes this easy pot roast crock pot recipe the best pot roast you’ll ever make. The coconut oil helps form a crust on the roast, which helps seal the juices into the roast as it cooks.

To brown the roast, first melt the coconut oil in a large pan over medium heat until it is hot. As the oil heats up, pat the roast dry with paper towels. Then add the roast into the hot oil. Brown each side for 2-3 minutes per side.

  • Cook on Low: For best results and a more tender pot roast, choose the longer cooking window at a lower temperature.
  • Use Another Cut of Meat: While I typically use a boneless beef chuck roast, I’ve also used beef brisket. Both cuts make delicious recipes.
  • A Great Way to Add More Flavor: To make this flavorful low carb pot roast dish even tastier, try adding beef broth or beef stock into the pot roast sauce.
  • Keep Carbs Low: Remember to allow the meat to soak in the flavor of the balsamic vinegar sauce, but don’t scoop extra sauce on top of the beef if you want to limit the net carbs in this keto beef roast. Too much fat + too many carbs = weight gain. While the entire recipe is higher in carbs due to the balsamic vinegar, just limit excess sauce to avoid this equation.

With balsamic vinegar carbs at nearly 5 grams per ounce, most would not consider balsamic vinegar keto friendly. However, you don’t get all of the carbs in balsamic vinegar in this recipe since some of it dissipates while cooking. Also, much of the carbs in balsamic vinegar from the recipe remain in the crock pot.

How long to cook roast in crock pot?

Cook roast for 6-8 hours on low heat, or 3-4 hours on high heat.

Can I skip browning the beef?

If you’re short on time, or your goal is less dishes, you can skip this step. While removing this step cuts back on cook time, taking a few extra minutes to brown the meat gives this easy keto pot roast a good flavor. It also provides for more tender meat.

It it ok to cook a frozen roast in crock pot?

While technically you can cook a frozen roast in the crock pot by adding extra cooking time, this isn’t recommended as it will mostly likely result in dry, tasteless meat. You also won’t have the opportunity to brown the beef, which really takes the flavor of this beef to the next level.

A frozen roast is typically better suited for a pressure cooker recipe.

Ingredients

Scale
  • A 3–4 pound chuck roast
  • Β½ cup balsamic vinegar
  • 1–2 tablespoons coconut oil (enough to cover the bottom of a pan once melted)
  • 2 tablespoons coconut aminos
  • 2 teaspoons minced garlic
  • 1 teaspoon oregano
  • Nonstick cooking spray

Instructions

  • Preheat the crock-pot on a low setting
  • While the crockpot heats up, melt the coconut oil in large frying pan over medium-high heat until it’s hot.
  • Pat the roast dry with a paper towel.
  • Once the oil is hot, add the roast to the oil. Brown on each side for 2-3 minutes.
  • Spray the crock-pot with nonstick cooking spray (for easy clean up).Β 
  • Place roast into crock-pot.
  • Add balsamic vinegar, coconut aminos, minced garlic, and oregano to coconut oil over medium heat. Stir sauce together while heating over medium heat for 2-3 minutes.
  • Pour sauce over roast in crock-pot. Be sure to scrape all seasonings and brown bits from pan for best flavor.
  • Cook on low heat for 6-8 hours.

Notes

If you’re short on time, or want less dishes, you can skip browning the meat.

  • Add it straight into a preheated crockpot and pour the sauce over the meat.
  • Keep in mind, the meat will not be as tender if you skip this step.Β 

Store roast in an airtight container in the fridge. Reheat on the stovetop throughout the week. This tastes great reheated as roast beef nachos. (For a low carb version, just leave out the chips, while adding your favorite nach toppings on top of the beef roast.

Leftovers also heat up nicely with eggs.
