Balsamic beef is an easy throw it in the crockpot and forget all about it keto main dish. It’s the perfect blend of delicious + easy that makes a ketogenic diet such an amazing lifestyle!
A lot of people will wince at the thought of using balsamic vinegar in any keto dish because look at all of those carbs! Unless you pick up the crockpot once it’s finished cooking and drink all of that sweet sauce down, I think you’ll be ok 😉
The amount of balsamic vinegar the beef absorbs provides minimal excess carbs to your day. If you have to worry about those few extra carbs blowing your budget, you may need to hold back on any processed “keto friendly” foods you’re eating throughout the day – mmmkay?
If you scroll below to check out the nutrition facts, the carbs seem really high. But like I just said, unless you’re drinking ALL of that balsamic juice, that number isn’t really how many carbs you’ll be getting from this meal. While it’s OK to spoon a little extra sauce over you beef, don’t go too crazy since that’s a quick way to add a lot of carbs to this dish.
Anytime you make anything in the crockpot, don’t forget to spray it with non-stick cooking spray – this quick step will make clean up So. Much. Easier.
Ditch the canola oil based cooking sprays since no matter what the American Heart Association tells you, that stuff just isn’t good for you … or your heart.
Some keto health experts even go so far as to say highly processed vegetable oils are worse for your health than smoking cigarettes.
I haven’t done the research myself, so I can’t vouch for that – but let’s just skip it and pay a few extra cents for a high heat coconut oil cooking spray.
Once the crockpot has a few minutes to warm up and it’s been sprayed for easy clean up, mix together all of the sauce ingredients and pour it over the roast.
I like to pour the sauce over the beef before I add the spices since the pouring action actually washes away all of the spices. Is this proper cooking etiquette? Meh – probably not … but it certainly makes for some delicious beef!
So once you pour on that delicious sauce, shake on your favorite spices. I didn’t provide any measured amounts since your preference for seasonings is probably different than mine.
Keep in mind – you can always add more salt later, but once you’ve added too much, it’s too late. Go light if you’re unsure how much you want on there.
Once your meat is all juiced and seasoned, then you’re ready to close your pot. Yes, I realize that sounds a little less like cooking, a little more like 50 Shades of Gray. I’m going to leave it on this blog anyway.
Let the roast simmer on low for 6-8 hours. Do your best to not open the lid until cooking time is up since each time you open that lid, you’ll have to add on 15 minutes of cooking time.
It’s going to smell delicious … you’re going to want a sneak peek … but don’t do it! Just have patience and you’ll be feasting on that delicious balsamic beef before you know it!
Bacon Wrapped Chicken with Spicy Cheese Sauce

Bacon Wrapped Chicken:
- 1 lb chicken breasts
- 1/2 lb bacon
- Salt, pepper, garlic powder to taste
Spicy Cheese Sauce:
- 1/4 cup heavy whipping cream
- 2 tbsp butter
- 1/4 cup cream cheese
- 1/2 cup grated Mexican cheese
- Pinch of sea salt
To Prepare the Chicken:
- Preheat the air fryer to 400 degrees F
- Line the air fryer tray with parchment paper
- Cut the chicken into 1/2 inch strips. Season to taste with salt, pepper and garlic powder.
- Wrap each slice of chicken with one slice of bacon.
- Place the wrapped chicken strips into the air fryer and cook for approximately 15 minutes. Flip and cook for another 10-15 minutes, or until chicken is cooked thoroughly.
While the chicken is cooking, prepare the cheese sauce:
- Add the cream and butter to a small saucepan and heat over medium heat.
- While the butter is melting, stir in the Mexican cheese and cream cheese.
- Continue to stir the ingredients until melted together. Then bring to a simmer.
- Once the cheese bubbles, remove from heat and stir.
- If you prefer a thicker cheese sauce, continue to heat for another 5 minutes, or until it reaches your desired thickness.
Once the bacon wrapped chicken is fully cooked, top it with the spicy cheese sauce
