Balsamic Vinegar Pot Roast

A simple low carb crock pot recipe made with balsamic vinegar. Keep this pot roast crock pot recipe handy for whenever you need a quick keto meal your whole family will love.

Ingredients

  • A 34 pound chuck roast
  • Β½ cup balsamic vinegar
  • 12 tablespoons coconut oil (enough to cover the bottom of a pan once melted)
  • 2 tablespoons coconut aminos
  • 2 teaspoons minced garlic
  • 1 teaspoon oregano
  • Nonstick cooking spray

Instructions

  • Preheat the crock-pot on a low setting
  • While the crockpot heats up, melt the coconut oil in large frying pan over medium-high heat until it’s hot.
  • Pat the roast dry with a paper towel.
  • Once the oil is hot, add the roast to the oil. Brown on each side for 2-3 minutes.
  • Spray the crock-pot with nonstick cooking spray (for easy clean up).Β 
  • Place roast into crock-pot.
  • Add balsamic vinegar, coconut aminos, minced garlic, and oregano to coconut oil over medium heat. Stir sauce together while heating over medium heat for 2-3 minutes.
  • Pour sauce over roast in crock-pot. Be sure to scrape all seasonings and brown bits from pan for best flavor.
  • Cook on low heat for 6-8 hours.

Notes

If you’re short on time, or want less dishes, you can skip browning the meat.

  • Add it straight into a preheated crockpot and pour the sauce over the meat.
  • Keep in mind, the meat will not be as tender if you skip this step.Β 

Store roast in an airtight container in the fridge. Reheat on the stovetop throughout the week. This tastes great reheated as roast beef nachos. (For a low carb version, just leave out the chips, while adding your favorite nach toppings on top of the beef roast.

Leftovers also heat up nicely with eggs.
