The best part of a keto diet is the fat bombs! Not only can they curb your sweet tooth, but fat bombs are a great thing to include in a ketogenic diet to ensure you get enough healthy fats. Win-win!
We all know regular cookie dough has far too much regular sugar to be a good option on a low carb diet. I mean, if you want to stay in your regular old jeans – have at it!
As tempting as that raw cookie dough sitting in your freezer is, why not whip up a batch of low carb cookie dough instead? That way you can actually enjoy delicious keto cookie dough without any guilt … or the spiked blood glucose levels that are keeping you out of ketosis!
These keto cookie dough fat bombs are made up of four simple ingredients you probably already have in your pantry. In my humble keto blogger opinion, they taste even better than traditional cookie dough.
Enough selling the benefits of this edible keto cookie dough recipe. I’m sure you know all too well the health benefits of adding more high fat treats to a keto diet. Let’s talk about how to make this easy recipe so you can get back to burning fat by eating enough healthy fats.
Before we get to the how to’s, I have to disclose I’m an Amazon Associate, which means this blog may contain affiliate links where I earn a small commission. The good thing is those pennies add up to keep this healthy fat blog going.
Now let’s makes these delicious keto cookie dough bites.
It’s a good idea to take a stick of butter out of the fridge before you get started since this recipe works best with softened butter. I prefer to use unsalted butter for this fat bomb recipe.
Once the butter is room temperature, add it to a large mixing bowl with the vanilla extract. Use a hand mixer to mix together until the butter is light and fluffy. This should only take a few minutes.
Next add in the dry ingredients. First add the almond flour into the large bowl. Beat the butter and almond flour together with a hand mixer until no dry spots remain.
Then add in the chopped chocolate. Before you get your hands all messy for the next part of this recipe, let’s talk a little bit about the chocolate I use in keto desserts.
This might come off a little bit like a lecture, but I assure you it’s not. I want to let you in on all of the keto tricks and tips I used to lose more than 100 pounds, so let’s talk about the kind of chocolate I use. Let’s also touch on the not so great options.
I prefer to use a high quality dark chocolate in cookie dough balls. I order chocolate bars for various keto recipes and then chop them up into homemade dark chocolate chips for this edible cookie dough recipe.
While some keto advocates tell you to steer clear of dark chocolate since it has a little bit of added sugar, I believe our bodies respond better to the real thing.
I stay far away from the sugar alcohols found in keto friendly products like Lily’s chocolate chips. A lot of people have trouble digesting sugar-free chocolate chips. When your body can’t digest something you eat, it will store it in fat cells until the coast is clear.
If you’re busy counting up the net carbs in these keto-friendly products all day long, unfortunately the coast is never clear.
While more people are able to digest other types of keto sweeteners like monk fruit sweetener and liquid stevia, I still don’t love adding any additional sweeteners to my keto dessert recipes.
Even though I lost a lot of weight including all of the keto-friendly sweeteners in my plan, I struggled to keep the weight off since cravings for carbs came back. I will warn you, it took time for my taste buds to adjust.
If your taste buds are still adjusting, or you don’t mind leaving sweeteners in your low carb guilty pleasures, get this Keto Sweetener guide to help you figure out the best sweeteners and how to convert them in various recipes.
Now let’s get messy and finish up this keto chocolate chip cookie dough recipe.
Add in the chopped chocolate and mix by hand to combine well. Roll the cookie dough into balls in 1 tablespoon increments and place them on a baking sheet. I roll the balls by hand while estimating the size. Feel free to use a cookie scoop if you like things a little less messy.
Refrigerate the cookie dough balls until firm, which takes approximately 20 minutes. Store them in the fridge in an airtight container. I store them in a Ziploc bag.
Be sure to save this edible chocolate chip cookie dough recipe to your keto fat bomb Pinterest board.
