Keto Mexican Cauliflower Rice

A quick keto side dish with a Mexican flair.


  • 10 oz bag riced cauliflower
  • 3 tbsp fresh salsa
  • Chopped green onions to garnish
  • 23 tbsp coconut oil (enough to cover the bottom of the skillet once melted)
  • 1 small sweet onion, diced
  • 2 tsp minced garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp sea salt
  • 1/4 tsp oregano
  • 1/4 tsp cayenne pepper (optional)


  • Melt the coconut oil in a skillet over medium-high heat
  • Once melted, stir in the diced onions and minced garlic. Cook until the onions soften and the garlic is lightly browned. This should take 2-3 minutes.
  • Stir in riced cauliflower. Cook until tender, but not mushy. This takes approximately 5 minutes. Stir on occasion while the rice cooks.
  • Once the rice is almost cooked, season with cumin, chili powder, salt, oregano and cayenne pepper. Stir well to combine.
  • Remove from heat. Stir in the salsa.
  • Garnish the Mexican cauliflower rice with diced green onions.
