But wait – taco Tuesday isn’t complete without low carb tortillas. I mean, you gotta have some low carb tortilla chips to add a little extra crunch to your healthy taco salad with tortilla strips, am-I-right?
Meh – who needs the extra carbs? Keep this low-carb taco salad simple by layering sour cream mixed with homemade taco seasoning. If you don’t love mixing up your own version, store bought seasoning will do in a pinch. Then top with healthy keto goodness until your heart’s content.

I love my easy taco salad recipe to include wholesome ingredients like chopped romaine lettuce, cherry tomatoes, and other favorite taco toppings. These might include chopped green onions and cheddar cheese. I may even toss on a few black olives, chopped bell peppers, or a couple of fresh cilantro leaves to mix things up.
Even though the recipe card only lists my usual toppings, don’t feel limited. Add any of your favorite toppings to your low carb taco salad to make it your own.
Choose High Quality, High Fat Beef:
When it comes to the taco meat, steer clear of the ground turkey and lean ground beef options. This is the best part of a healthy keto taco salad. You need that flavorful fat to lose weight on a ketogenic diet!
If you’re giving me the side eye because you truly prefer leaner meats to higher fat versions, Lucy, you’ve got some ‘splaining to do. On second thought, sit tight while I explain this next part.
A Few Words about the Importance of Digestion on a Keto Diet:
Choosing lean meats on a keto diet is problematic. Your body needs that extra fat to help you get into ketosis. Fat goes a long way in helping you feel satiated. This is especially true after dropping most of the carbs you previously ate.
If you don’t love the taste of higher fat meats, it often isn’t a preference problem at all. This is more of a digestion problem. After years of following mainstream low calorie diets, many lose the ability to process foods higher in healthy fats. When your body isn’t able to digest a food, your natural instinct is to veer away from that food.
If you’re not able to digest high quality fats on a keto diet, this is a problem. A keto diet requires 75% – 85% of your calories to come from healthy fats.
The solution isn’t to keep avoiding higher fat meats. This will only make the problem worse long term. You also won’t last long with a ketogenic diet. If you gasp at the thought of eating higher fat meats, you need to take this free keto digestion course. All it costs is a little bit of your time. Speaking from experience here – taking time to improve digestion is the thing that helped me stick with a low carb lifestyle. The 100 pounds I lost in the process – I’d say that’s pretty life changing.
High Quality Meat is Important on Keto:
That being said, grass-fed beef is always my #1 choice if finances permit. Even if it’s a stretch, a pound of ground beef that’s higher in quality will do so much more for your health. Conventional meat that’s really only a step above the sketchy Mexican food from the Taco Bell drive thru, not so much.
Sorry drive thru friends. Yes, you can lose weight with lazy keto. Keep in mind it doesn’t have quite the same health gains as focussing on high quality foods that are also low in carbs. Net carbs can only do so much when it comes to weight loss on keto, mmm-kay?

How to Make A Low Carb Taco Salad
Once you’re ready to brown the ground beef, cook it over medium-high heat in a frying pan. While it’s browning, sprinkle it with garlic powder or even a chili powder if you want to add a nice kick. This makes for a more zesty keto taco salad.
Save the homemade keto taco seasoning til the end, after the beef is browned. Mix it in a small bowl. Set some aside since you need to mix some in with the sour cream. Add half of it to the cooked ground beef along with the water. Turn the stove down to medium heat. Let the meat come to a nice simmer while you allow the seasoning and taco meat to combine.
But wait, I jumped ahead here. I seem to get overly excited when it comes to my keto salad recipes. 😂 There’s just so much deliciousness when it comes to keto recipes mixed with nutrient dense veggies, is all.
While the taco meat is cooking, start meal prep on the fresh toppings.
You can add this to your super easy recipes list by using pre-shredded lettuce from the grocery store. This is especially helpful on a busy day. If you want even more nutrients, make a super healthy salad by chopping up a nice spring mix lettuce or spinach for the taco salad base.
It’s up to you to choose to make a simple salad with simple ingredients. Otherwise take your nutrition to the next level with a little extra elbow work. You have complete control on how simple or complicated to make keto recipes. Just stick with whatever will help you stick to keto long term!
Next mix the sour cream with the taco seasoning to make up the base of this low carb salad. The addition of sour cream makes this a great recipe since you avoid store bought salad dressings. Most of these dressings contain less than ideal ingredients. (Here’s looking at you soybean oil 🧐).

- 1 + 1/2 oz taco seasoning
- 3/4 cup water
- 4 oz sour cream
- 4 oz shredded cheese
- 2 roma tomatoes, chopped
- 1 small red onion, chopped

- Brown ground beef in skillet
