Keto Taco Salad with Ground Beef

An easy low carb taco salad your whole family will crave. Skip low carb tortillas or other temptations that add excess carbs and make this keto taco salad recipe instead! It’s so fresh and easy, you’ll want to make it a staple in your keto diet meal plan.

Ingredients

  • 1 pound ground beef
  • 1 + 1/2 oz taco seasoning
  • 3/4 cup water
  • 4 oz sour cream
  • 4 oz shredded cheese
  • 2 roma tomatoes, chopped
  • 1 small red onion, chopped
  • 1 bag shredded lettuce

Instructions

  • Brown ground beef in skillet
  • Once browned, stir in 1 oz taco seasoning and water. Bring to a boil, then reduce to simmer for 5-10 minutes. Allow ground beef to cool slightly.
  • Mix sour cream and remaining taco seasoning together in a small bowl. Layer the sour cream flat onto a plate. (Use a large plate for family style, or 4 individual plates for smaller servings).
  • Top sour cream with shredded lettuce, ground beef, and preferred taco toppings and serve. 

Notes

  • Add your favorite taco toppings to make this a recipe all your own!
  • Homemade taco seasoning is best – but otherwise find a trustworthy brand without junk ingredients.
  • If dairy is an issue for you, you can leave the cheese off. Alternatively, you can try raw dairy cheddar. Forager also makes a great dairy-free sour cream alternative.
  • Use 80/20 ground beef in lieu of a leaner cut or ground turkey. The fat is flavorful, plus it can help improve weight loss on a keto diet.
