Mediterranean Chicken Breast Ingredient Checklist
This Mediterranean chicken recipe is made up of two parts: boneless chicken breasts and the marinade.
When it comes to this chicken dinner, it’s perfectly OK to swap out the chicken to make Mediterranean chicken thighs instead. No matter which cut you decide on, I always recommend using the highest quality meat you can find. Conventional meats contain toxins you don’t want on a keto diet.
If it’s difficult to source organic chicken locally, Butcher Box is the delivery service I use to deliver high quality meats right to my doorstep. While we mostly use this service to order grass-fed beef, we always add a few packs of organic chicken as well.
Even though I prefer simple recipes with dried ingredients, I bet this recipe would be great if you swap out fresh basil leaves for the dried spice version.
Whether you use dried spices or fresh herbs, this easy chicken breast recipe has a fresh flavor you’ll love.
How to Make Mediterranean Chicken Breasts
Start out by placing all of the Mediterranean marinade ingredients in a large zip bag. Close the bag and give it a good shake to mix up the marinade. Then place the chicken in the bag. Shake gently in order to coat all sides of each chicken breast with the marinade.
Here’s a quick tip when it comes to baking time for chicken dishes: The thicker the chicken is, the longer it takes to cook. If you’re in a hurry, be sure to slice the chicken breasts in half lengthwise. This can cut the baking time in half so you can have an easy weeknight dinner ready when you need it. You could also pound the chicken out with a meat mallet, but I prefer the simple method of slicing it in half with a large knife.
Place chicken breasts in the fridge to marinate for 30 minutes. While I allow other keto Mediterranean recipes to marinade for up to 24 hours, that’s too much time when it comes to chicken. You can allow it to soak in the flavors while the oven heats up.
Next, preheat oven to 350 degrees F. Place the marinated chicken into the baking dish in a single layer.
Bake until the chicken is fully cooked. You’ll know it’s ready when it’s white in the middle, or the internal temperature reaches 165 degrees F. This usually takes 25 – 30 minutes.
Once the chicken is fully cooked, remove from the oven and serve with your favorite keto side dish. I love this chicken recipe with cilantro lime cauliflower rice. It also goes well with creamy garlic green beans.
The Mediterranean Chicken Dinner Wrap Up
This healthy recipe is great for simple weeknight dinners, but since it has so much flavor, you could even save it for a fancy dinner party. It’s a great choice no matter what the occasion.
I love doubling the batch on easy dinners like this. Store the leftovers in an airtight container for an easy lunch the next day. Be sure to reheat it on the stovetop or in a toaster oven for the best result. Reheating chicken in a microwave can make it rubbery and gives it a weird taste.
