This Mediterranean chicken recipe is made up of two parts: boneless chicken breasts and the marinade.
When it comes to this chicken dinner, it’s perfectly OK to swap out the chicken to make Mediterranean chicken thighs instead. No matter which cut you decide on, I always recommend using the highest quality meat you can find. Conventional meats contain toxins you don’t want on a keto diet.

How to Make Mediterranean Chicken Breasts
Start out by placing all of the Mediterranean marinade ingredients in a large zip bag. Close the bag and give it a good shake to mix up the marinade. Then place the chicken in the bag. Shake gently in order to coat all sides of each chicken breast with the marinade.
Here’s a quick tip when it comes to baking time for chicken dishes: The thicker the chicken is, the longer it takes to cook. If you’re in a hurry, be sure to slice the chicken breasts in half lengthwise. This can cut the baking time in half so you can have an easy weeknight dinner ready when you need it. You could also pound the chicken out with a meat mallet, but I prefer the simple method of slicing it in half with a large knife.
Place chicken breasts in the fridge to marinate for 30 minutes. While I allow other keto Mediterranean recipes to marinade for up to 24 hours, that’s too much time when it comes to chicken. You can allow it to soak in the flavors while the oven heats up.
Next, preheat oven to 350 degrees F. Place the marinated chicken into the baking dish in a single layer.
Bake until the chicken is fully cooked. You’ll know it’s ready when it’s white in the middle, or the internal temperature reaches 165 degrees F. This usually takes 25 – 30 minutes.
Once the chicken is fully cooked, remove from the oven and serve with your favorite keto side dish. I love this chicken recipe with cilantro lime cauliflower rice. It also goes well with creamy garlic green beans.

Ingredients
- 1 pound chicken breasts or thighs
- 1/3 cup coconut oil, melted
- 1/4 cup coconut aminos
- 1/4 cupΒ worcestershireΒ sauce
- 2 teaspoons minced garlic
- 2 tablespoons dried basil
- 1 tablespoon oregano
- 1 teaspoon black pepper
- Non stick cooking sprayΒ (I use Spectrum Coconut Spray Oil fromΒ Thrive Market)
Instructions
- Place all ingredients (except chicken) in a ziploc bag. Close and shake bag to mix marinade
- Place chicken into ziploc bag and shake gently to coat chicken
- Place chicken in fridge and allow to marinate for 30 minutes
- Preheat oven to 350 degrees
- Coat baking dish with nonstick cooking spray
- Place marinated chicken into baking dish and bake for approximately 25 minutes, or until chicken is white on the inside
