Even though every other weight loss guru exclaims it’s necessary to eat less calories in order to lose weight, haven’t we all tried that already?
Before I lost 100 pounds with an easy low carb lifestyle, I too thought that was the way to weight loss nirvana. Now that I’ve easily maintained the weight I lost for several years, I know that advice is hogwash!
While cutting calories may work at first, eventually your body catches on and will demand you eat even less to continue along your merry little weight loss way. And while I love intermittent fasting as much as the next girl, eventually you have to eat … you know, if you don’t want to die.
The problem with cutting calories too low in order to lose weight is you also lower your metabolism with each new caloric shift. When you go too low, your survival instincts kick in – and that’s when you binge! And I’m not talking about binging on a yummy fat bomb recipe, mmm-kay?
When you stick to eating low carb recipes, like coconut oil chocolate fat bombs on keto, then it’s easier to skip the binging episodes that typically occur in conjunction with too much calorie restriction.
Well that, plus coconut oil is proven to be one of the best foods that increase metabolism and burn fat.
Keto Chocolate Fat Bombs with Mint Ingredients
This easy fat bomb recipe only requires 4 ingredients: dark chocolate, coconut oil, vanilla extract, and peppermint oil.
When it comes to dark chocolate, my favorite keto friendly dark chocolate is Lindt 90% since European chocolate brands are typically low mold. I also enjoy Endangered Species 88% dark and Theo’s 85% dark since both brands are fair trade certified.
The best kind of coconut oil to use for this keto chocolate fat bomb recipe is unrefined coconut oil. The best organic coconut oil found at most grocery stores is Nutiva. My favorite brand for coconut fat bombs is Thrive Market Organic Virgin Coconut Oil.
If you’re not a big fan of coconuts because you don’t love the taste of coconut, you can get away with a refined coconut oil in keto recipes. Keep in mind, while this variety has a more neutral taste – you won’t get all of the health benefits that come along with an unrefined oil.
For the peppermint oil, a food grade essential oil is perfect since you only use a few drops for the entire batch of this high-fat snack.
If you’d rather not mix your favorite essential oil with a sweet treat you plan to eat, you can also use a peppermint flavor. If you go this route, you’ll need more than a few drops. Typically 1/2 – 1 teaspoon should be enough for the entire batch.
How to Make Chocolate Coconut Oil Fat Bombs with Mint
These mint chocolate fat bombs with coconut oil is the easiest recipe to make since these keto fat bombs only require a few steps and minimal supplies.
Start by adding the coconut oil and dark chocolate into a saucepan. Melt the healthy fats together over medium heat. Stir on occasion with a whisk to combine the fats as they melt.
Once melted and combined, remove from heat. Allow the chocolate fat bomb mixture to cool for a few minutes.
After the chocolate mixture cools, pour in the vanilla extract and a few drops of peppermint oil.
This is a good time to taste the batter to see if the dark chocolate flavor is sweet enough for you. If not, feel free to add a keto-friendly sweetener (like liquid stevia) into the melted fats. Stir with a whisk until well combined.
Finally, pour the melted chocolate coconut oil mixture into a mini cupcake pan in 1 tablespoon increments. If you don’t have one of these trays, you can also pour the melted fats into an ice cube tray or use silicone molds.
Pop the trays into the freezer until the chocolate coconut oil fat bombs are solid. This should take 20 – 30 minutes.
Remove the trays from the freezer, and pop the fat bombs out of the tray. An easy way to do this is with a butter knife. If these little bites don’t pop out with ease, you may need to let them harden a little longer in the freezer.
Store the fat bombs in an airtight container in the freezer or fridge. I typically store keto chocolate fat bombs in the freezer and let one melt in my mouth after a meal.
Don’t allow coconut oil chocolate fat bombs to sit out at room temperature for too long since they melt quickly.
Chocolate Fat Bombs with Coconut Oil FAQs
For the best results on a weight loss plan, I prefer keto desserts without artificial sweeteners. Even though keto friendly sugar-free sweeteners are common in easy keto recipes, a great way to kick sugar cravings is by eating less sweetened foods in the first place.
Since most low carb sweeteners are 200 – 600 times sweeter than real sugar, it’s sometimes hard to kick your sweet tooth to the curb when you keep too many keto sweeteners in your plan.

- 10 tablespoons coconut oil (5 oz)
- 4 oz dark chocolate (85% or higher)
- 1/2 tsp vanilla extract

Instructions
- Start by heating the dark chocolate and coconut oil in a saucepan over medium heat. Stir with a whisk to combine the fats as they melt together.Β
- Once melted and combined, set aside to cool.
- After the chocolate mixture cools, whisk in the vanilla extract and peppermint drops.
- Use a tablespoon to scoop the chocolate coconut oil mixture into a mini muffin tray in 1 tablespoon increments.
- Place in the freezer until firm. This should take 20-30 minutes.
- You should be able to easily pop the chocolate fat bombs out with a butter knife. If they stick, then pop them back in the freezer for a little longer.
- Store in an airtight container in the freezer or fridge.
Notes
- I store coconut oil fat bombs in the freezer and then let one melt in my mouth after a meal. It’s like an after dinner mint that helps you burn fat.
- Don’t add the vanilla extract and peppermint oil to the chocolate mixture while it’s still on the heat, as this can cause the chocolate to burn. Burnt fat bombs do not taste good. (Don’t ask me how I know).
- Pay attention to the chocolate and coconut oil as it melts so you don’t burn the chocolate. (Again, don’t ask me how I know).
- You do not need to add these into mini muffin liners since the chocolate should not stick to the muffin pan.
- Store in the fridge or freezer as quickly as possible, as chocolate fat bombs with coconut oil melt quickly at room temperature.
