Pecan Crusted Chicken

A low carb pecan crusted chicken recipe that your whole family will love. Even with minimal ingredients, this pecan chicken dish has so much flavor. You can prepare the honey mustard chicken sauce ahead of time to make this an easy chicken dinner for busy week nights.


  • 1 lb chicken breast 
  • 2 oz honey mustard sauce
  • 1/2 cup pecans
  • Garlic powder, salt and pepper to taste

For Homemade Honey Mustard Sauce:

  • 1/2 cup avocado oil
  • 2 tbsp honey
  • 2 tbsp dijon mustard
  • 1 tbsp yellow mustard
  • 1 tsp minced garlic


Meal Prep:

  • Start by brining the chicken. Fill a large bowl with 2 cups of water, plus 2 tbsp kosher salt. Add the chicken and allow it to soak in the fridge for 10-15 minutes.
  • Once it is fully brined, carefully drain the water. Trim chicken and set aside.
  • While the chicken brines, mix up the honey mustard sauce.
  • Chop pecans with a pecan nut chopper and set aside.
  • Preheat oven to 450 degrees F.

Bake Chicken:

  • First, pat chicken dry with paper towels. Then add chicken in a single layer into a shallow baking dish.
  • Season chicken with garlic powder, salt and pepper to taste.
  • Brush honey mustard sauce onto both sides of chicken.
  • Sprinkle chopped pecans over chicken.
  • Place into the preheated oven and bake until the chicken is fully cooked. This should take 15-20 minutes, depending on how thick the chicken is. Check chicken with a meat thermometer to ensure an internal temperature of 165 degrees F.
  • Allow the chicken to rest for at least 5 minutes before slicing into the pecan crusted chicken.


  • Mix up the honey mustard chicken sauce ahead of time to make meal prep simple. If the sauce hardens in the fridge, just let it sit out while the oven heats up. Stir well before brushing the sauce onto the chicken.
  • You can skip the nonstick spray for this recipe since there is oil in the honey mustard sauce. This should prevent the chicken from sticking to the glass baking dish. 
  • If chicken is uneven, slice into chicken cutlets or use a meat mallet to pound the chicken until it is even.
  • Brining the chicken first ensures juicy chicken that’s not rubbery. Try not to skip this step.
