A great way to stick to keto on busy weeknights is to make good use of your slow cooker. My favorite kind of recipes on a low-carb diet are easy keto recipes my entire family will devour.
This keto Philly cheesesteak recipe is a keto dinner that fits perfectly into this scenario. It’s a simple recipe made from a pot roast that’s smothered in cheese and peppers. The total carbs are low and the deliciousness factor is high.

Easy Keto Meal Prep
If you’re a set it and forget it kind of girl, there’s a few things you can do the night before. Taking a few minutes to meal prep on a keto diet can help you stick with it. It makes slow cooker recipes like this an easy meal to dump into the crockpot and go. Even though prepping ahead optional, it’s a great choice if mornings seem to get away from you.
The first thing you can put together ahead of time is the spice mix. You can mix up just enough spices for this recipe, or make a larger batch to use in the future. You can test this mix out in other keto beef recipes you make beyond this Philly beef recipe. It’s a great mix to sprinkle over ground beef leftovers as you heat them up on the stove.
The spices for this easy recipe include dried thyme, black pepper, garlic powder, onion powder, crushed red pepper, paprika, and salt. The measurements are simple for this mix since everything is half of a teaspoon, except the salt. Add all of the spices into a small bowl and combine. Pour into a mason jar for easy overnight storage.
It’s easy to prep the veggies ahead of time too. Take a few minutes to slice the onions and peppers. Store sliced vegetables in green containers in the fridge overnight. Once again, you can slice enough for only this recipe or cut up a few peppers and onions to use later in the week.
For this recipe, I slice a green bell pepper, red bell pepper, and a large sweet onion. Feel free to use any combo of peppers and onions you prefer for Philly cheese beef.
Keto Beef Tips for a Keto Roast Recipe
When it comes to the cut of meat used for this keto version of Philly beef, choose whichever cut works best for you. I use a 3-4 pound beef chuck roast. This kind of roast typically works well for pot roast and stew recipes.
What if you have a top roast, rump roast, or a sirloin top roast sitting in the freezer? These are all great options for slow cooker recipes. There are many roasts that can work for this easy keto dinner, so use whatever roast fits your preference.
While you could use a pressure cooker, the quick release terrifies me – so I never actually tried it. If you’ve been searching for the perfect keto pot roast instant pot recipe – try this one out and let me know how it goes.
Also, it’s important to choose high-quality beef when you switch to a keto diet. The point of keto is to bring the inflammation down. Since conventionally raised meats have more toxins, sticking with this option can keep inflammation high.
If you’re unable to find a high-quality roast at your local grocery store, I have good news. Butcher Box offers a monthly subscription service where they’ll deliver high-quality roasts right to your door. We get a variety of chicken, ground beef, steaks, and roasts delivered every month. The meats taste great. Plus they’re all organic and grass-fed.
How to Make Crock Pot Philly Cheese Beef
There will be times when you’re in a hurry. On these days you may be tempted to cook your favorite recipes in a crockpot on high heat. If this is your first time making this beef recipe, and you didn’t leave enough time for the recipe to cook on low heat, you can get away with cooking it on a higher setting. While making this change speeds up cooking time by at least a few hours, next time allow more time for the Philly beef to cook. Slow cooking on a lower setting leaves you with more tender beef.
Season the Roast
Once the crockpot is warm and greased, place the roast inside. Next, pour the sauce over the roast. You can use either a third cup of bone broth or coconut aminos for this recipe. I’m strange in that I don’t love the smell of beef broth slow cooking all day, so I go with coconut aminos.
In case you’re not familiar with coconut aminos, it’s an easy keto replacement for soy sauce. I sometimes even use it as a replacement for Worcestershire sauce in recipes. Just as I’m sensitive to smells, I’ve also developed sensitivities to several common condiments – my favorite steak marinade being one of them. I definitely use coconut aminos as a replacement in many recipes.
After you pour your sauce of choice, spoon 1-2 teaspoons of minced garlic over the roast.
Let’s be real here – it must be my goal in life to keep all of the vampires out of my house since I nearly double the garlic in every recipe. If you also don’t like vampires, feel free to raise your garlic level as well.
Next, pour the mixed seasoning over the roast. Then top with the sliced peppers and onions. Only add the vegetables at this point if you prefer these flavors to really seep into the roast. If you like crunchy vegetables, you can wait to add these until the roast is almost done.
Cover and cook on low heat for 6-8 hours. Don’t be tempted to open the crockpot lid while the roast cooks. Every time you peek inside, that sets cooking time back another 15 minutes.
Add the Cheese
The final step to make keto Philly cheese beef is to top it with cheese. If you waited until the end to add the veggies, now’s the time. Before you add the cheese and veggies, you’ll probably want to drain some of the cooking liquid from the crockpot so you don’t end up with soggy cheese.
Grab a few potholders since the crockpot will be hot. Drain the excess liquid into a small bowl or cup. You can use the cup of liquid as a gravy to pour on top of your finished Philly beef.
Once you drain the liquid, add the veggies if you saved them until the end. Then top with provolone cheese. Cover the entire roast with cheese and then sprinkle dried parsley on top.
Allow the roast to cook for another 10 – 15 minutes, or until the cheese is melted.
Here’s a quick tip. If dairy causes problems in your keto diet, you can skip it. While cheese doesn’t add many grams of carbs to this recipe, eating too much dairy can stall some keto dieters. It’s true lots of melted cheese makes this recipe delicious, but the sad truth is not everyone can get away with eating cheese on a keto diet.
The good news is you can still enjoy this recipe without the cheese. If your whole family loves the gooey stuff, just spread cheese over half of the recipe.
