First thing, set the crockpot on low while you gather all of the ingredients. Then spray the crockpot with a nonstick cooking spray for easy cleanup.
There will be times when you’re in a hurry. On these days you may be tempted to cook your favorite recipes in a crockpot on high heat. If this is your first time making this beef recipe, and you didn’t leave enough time for the recipe to cook on low heat, you can get away with cooking it on a higher setting. While making this change speeds up cooking time by at least a few hours, next time allow more time for the Philly beef to cook. Slow cooking on a lower setting leaves you with more tender beef.
Season the Roast
Once the crockpot is warm and greased, place the roast inside. Next, pour the sauce over the roast. You can use either a third cup of bone broth or coconut aminos for this recipe. I’m strange in that I don’t love the smell of beef broth slow cooking all day, so I go with coconut aminos.
In case you’re not familiar with coconut aminos, it’s an easy keto replacement for soy sauce. I sometimes even use it as a replacement for Worcestershire sauce in recipes. Just as I’m sensitive to smells, I’ve also developed sensitivities to several common condiments – my favorite steak marinade being one of them. I definitely use coconut aminos as a replacement in many recipes.
After you pour your sauce of choice, spoon 1-2 teaspoons of minced garlic over the roast.
Let’s be real here – it must be my goal in life to keep all of the vampires out of my house since I nearly double the garlic in every recipe. If you also don’t like vampires, feel free to raise your garlic level as well.
Next, pour the mixed seasoning over the roast. Then top with the sliced peppers and onions. Only add the vegetables at this point if you prefer these flavors to really seep into the roast. If you like crunchy vegetables, you can wait to add these until the roast is almost done.
Cover and cook on low heat for 6-8 hours. Don’t be tempted to open the crockpot lid while the roast cooks. Every time you peek inside, that sets cooking time back another 15 minutes.
Add the Cheese
The final step to make keto Philly cheese beef is to top it with cheese. If you waited until the end to add the veggies, now’s the time. Before you add the cheese and veggies, you’ll probably want to drain some of the cooking liquid from the crockpot so you don’t end up with soggy cheese.
Grab a few potholders since the crockpot will be hot. Drain the excess liquid into a small bowl or cup. You can use the cup of liquid as a gravy to pour on top of your finished Philly beef.
Once you drain the liquid, add the veggies if you saved them until the end. Then top with provolone cheese. Cover the entire roast with cheese and then sprinkle dried parsley on top.
Allow the roast to cook for another 10 – 15 minutes, or until the cheese is melted.
Here’s a quick tip. If dairy causes problems in your keto diet, you can skip it. While cheese doesn’t add many grams of carbs to this recipe, eating too much dairy can stall some keto dieters. It’s true lots of melted cheese makes this recipe delicious, but the sad truth is not everyone can get away with eating cheese on a keto diet.
The good news is you can still enjoy this recipe without the cheese. If your whole family loves the gooey stuff, just spread cheese over half of the recipe.
