Check out this easy weeknight meal that takes only a few minutes to set up in the morning. You’ll start drooling as soon as you walk through the door.
For an even easier make-ahead meal, premix the spices and chop the veggies ahead of time.
Ingredients for Roast:
2-3 pound chuck roast
6-12 slices provolone cheese
1 large green pepper
1 large red pepper
1 large onion
⅓ cup beef broth or coconut aminos
1-2 teaspoons minced garlic
Parsley to sprinkle
Non-stick cooking spray
Ingredients for Seasoning:
½ teaspoon dried thyme
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon crushed red pepper
½ teaspoon paprika
Mix ingredients for seasonings together in a small bowl and set aside.
Chop peppers and onions into strips. Set aside.
Spray crockpot with non-stick cooking spray
Place roast inside the preheated crockpot
Pour beef broth over roast
Spoon 1-2 teaspoons of minced garlic over roast. Spread to cover roast.
Top with seasoning, followed by onions and peppers
Cover and cook on low for 6-8 hours.
Uncover roast. If you add cheese, you may want to remove most of the juice and set aside to avoid soggy cheese.
Top roast with provolone cheese and sprinkle with parsley.
Cook for another 10-15 minutes, or until cheese is melted.
