Crockpot Philly Cheese Beef | Keto and Low Carb Crock Pot Recipe

For an even easier make-ahead meal, premix the spices and chop the veggies ahead of time.

Ingredients for Roast:

  • 2-3 pound chuck roast

  • 6-12 slices provolone cheese

  • 1 large green pepper

  • 1 large red pepper

  • 1 large onion

  • ⅓ cup beef broth or coconut aminos

  • 1-2 teaspoons minced garlic

  • Parsley to sprinkle

  • Non-stick cooking spray

Ingredients for Seasoning:

  • ½ teaspoon dried thyme

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon crushed red pepper

  • ½ teaspoon paprika

  • 1 teaspoon salt

Instructions

  • Preheat crockpot on low while prepping roast.
  • Mix ingredients for seasonings together in a small bowl and set aside.

  • Chop peppers and onions into strips. Set aside.

  • Spray crockpot with non-stick cooking spray

  • Place roast inside the preheated crockpot

  • Pour beef broth over roast

  • Spoon 1-2 teaspoons of minced garlic over roast. Spread to cover roast.

  • Top with seasoning, followed by onions and peppers

  • Cover and cook on low for 6-8 hours.

  • Uncover roast. If you add cheese, you may want to remove most of the juice and set aside to avoid soggy cheese.

  • Top roast with provolone cheese and sprinkle with parsley.

  • Cook for another 10-15 minutes, or until cheese is melted.
