With only a few ingredients, you can have this delicious boneless chicken thighs recipe on your dinner table with very little effort.

The ingredients for this chicken thigh keto recipe include chicken, a low carb BBQ sauce, Italian dressing, coconut aminos and minced garlic. When it comes to these ingredients, you can keep them as simple or as complicated as you want them to be.

Sauces

For instance, many grocery stores now carry several varieties of a low carb barbecue sauce. Pick your favorite kind and use it with this recipe.

Alternatively, you can make your own homemade BBQ sauce from scratch. I usually prefer this method so that I have control over the ingredients used. I find most store brands overdo the keto-friendly sweeteners, which means this ingredient overpowers all of the other flavors in keto recipes.

The same thing goes when it comes to the Italian dressing. While the store bought version tastes just fine, most commercial brands use highly processed vegetable oils in their salad dressings. These are the inflammatory ingredients you should avoid when you follow a ketogenic diet.

If the version of dressing you buy isn’t made out of olive oil, but contains canola or soybean oil instead, take a few minutes to whip up a homemade batch. It’s worth the few minutes it takes to put this recipe together.

If you’ve never heard of coconut aminos, this is a soy-free and wheat-free alternative to soy sauce. I used it in a ton of keto recipes. While it is a little higher in carbs since it’s made from the sap of the coconut plant, using it in small amounts only adds a little bit of extra carbs to your low-carb diet.

While we’re talking quality of ingredients, let’s talk chicken. I understand the easiest way to source chicken is to pick up whatever is on sale at your local grocer, but that’s not always the best method.

When it comes to this crockpot chicken recipe, using organic boneless skinless chicken thighs is best. Of course, if you prefer boneless skinless chicken breasts instead, choose the organic version as well. The point here is to choose a high quality meat.

If the debate of organic vs. conventional meat confuses you, allow me to clear this up.

Organic chickens are raised much differently than conventional chickens. The feed organic chickens eat is required to be grown without chemicals or GMOs. Also, the chickens are free range, which means they’re allowed outside – instead of being raised in cages where they’re not allowed to roam.

When it comes to organic vs. conventional, keep in mind any toxins your food eats will also be passed onto you. Even though organic chicken costs a little more – your health is worth the expense.

How to Make Zesty BBQ Keto Crockpot Chicken Thighs

Prep the Ingredients

Start by spraying the crockpot with a nonstick cooking spray. This helps make clean up easy. Then, preheat the crockpot on low while you gather all of the ingredients.

If you decide to make the BBQ sauce from scratch, you should meal prep this ahead of time since barbecue sauce takes a little time to cook and cool prior to use. Otherwise, just pull the jar you bought from the grocery store from the pantry or fridge.

You can take a few minutes to put together a batch of Italian dressing while the crockpot heats up since this only takes a few minutes.

To quickly make up a batch, add all of the spices for an Italian seasoning mix into a jar.

Then, whisk together with 2/3 cup olive oil, 1/4 cup white vinegar, and 2 tablespoons of Italian seasoning in a bowl. Since you only need to use 1/2 of a cup, you’ll have leftover dressing to use in other keto recipes throughout the week.

Add Into the Crockpot

Once all of your ingredients are ready to go, layer the chicken into the crockpot. Season to taste with dried minced garlic and salt. You could also use black pepper to spice this chicken up. I’m sensitive to this spice, so I usually leave it out.

Next, mix the keto-friendly BBQ sauce, coconut aminos and Italian dressing together in a bowl. Pour on top of the chicken thighs.

Cover and cook on low heat for 6-8 hours. You can cook this easy low carb recipe at a higher temperature if you’re short on time. In this instance, you will move the temperature setting to high heat and cook for 3-4 hours instead.

Once the chicken is fully cooked, turn off the heat. Shred the chicken with two forks. You can also use a hand mixer to make shredding a little bit easier.

Serve with your favorite keto side dishes. Store leftovers in an airtight container to use for a quick keto meal throughout the week.

I like to change up my leftovers by varying how I serve them. My favorite way to reuse leftover crockpot chicken is to reheat the shredded chicken on the stove top with melted butter. Then I add sour cream, green onions, and cheese to this delicious chicken to make chip-less keto BBQ chicken nachos.

Ingredients

Scale
  • 3 lbs chicken breasts or thighs
  • 12 oz low carb BBQ sauce
  • ½ cup italian salad dressing
  • 2 tbsp coconut aminos
  • Minced garlic and salt to taste
  • Non-stick cooking spray

Instructions

  • Spray crockpot with non-stick spray
  • Preheat crockpot while you prepare chicken and sauce
  • Layer chicken into crockpot. Season to taste with dried minced garlic and salt.
  • Combine low carb BBQ sauce, homemade Italian dressing and coconut aminos in a bowl. Stir to combine.
  • Pour sauce over chicken
  • Cook on low heat 6-8 hours
  • Shred with a fork once fully cooked and serve

You can replace coconut aminos with Worcestchire sauce if you prefer
