Miss spaghetti on a keto diet? Since most low carb pasta substitutes have a strange texture and often contain non keto-friendly ingredients, like wheat flour, these low carb spaghetti options aren’t the best choice when it comes to kicking regular pasta cravings to the curb.

While other low carb options, like shirataki noodles or spaghetti squash, can make for an easy recipe that’s low in carbs, my favorite way to enjoy pasta noodles on a low carb diet is with zucchini noodle recipes.

Keto Zucchini Noodles Ingredients and Tools

This recipe calls for a few simple ingredients you can pick up at any local grocery store. Of course, you need fresh zucchini when it comes to keto zoodle recipes, but in order to make buttery zoodles you’ll also need butter, minced garlic and seasonings like salt and black pepper.

The easiest way to make zucchini noodles is with a spiralizer. This is a great tool you can order from Amazon to make thin strips of zucchini that are a great way to replace pasta in recipes.

The Veggetti is a good option if you want something that’s simple and easy to store. If it’s your first time making zoodles, make sure to protect your fingers since the blades inside are sharp. The OXO handheld spiralizer is another easy to store option. Of course, there’s a large mix of larger vegetable slicers to choose from if you have the storage space.

Some of the tools may even have the option to mince fresh cloves of garlic as well. I prefer to order my minced garlic in jar form. Small cheats like this keeps keto cooking simple.

You could use a Julienne peeler in a pinch, but I find a handheld veggie spiralizer so much easier.

Health Benefits of Zucchini Noodles Recipes

This keto side dish is one of my favorite keto recipes because not only do you get plenty of nutrients from this flavorful dish, but you also get a dose of healthy fats. As a bonus, healthy fats like butter help absorb the fat soluble vitamins in vegetables like vitamins A, D, E, and K. Zucchini is a good choice that is rich in vitamin A, which helps support your vision and immune system.

If you prefer to eat uncooked zoodles, aka raw zucchini noodles, you’ll get a good dose of vitamin C. Once you heat the noodles, this brings out more vitamin A. Either way replacing real pasta with real food helps you get more nutrients with less grams of carbs in your keto lifestyle.

If you have a hard time fitting nutrient dense veggies into your keto diet, zoodles are the perfect choice.

How to Make Buttery Zoodles

Now that you understand some of the benefits of zucchini pasta, let’s talk about how to make this simple recipe.

Start by using your vegetable spiralizer to turn a large zucchini into vegetable pasta. If you choose one of the handheld options we talked about above, grab your spiralizer and a bowl. Rinse the zucchini and dry it with a paper towel. Next, chop off the ends. Then twist the zucchini into the blades to get zucchini noodles.

Next heat the butter in a skillet over medium heat. As the butter melts, add in the minced garlic. Allow the garlic to cook for a few minutes before adding in the spiralized zucchini noodles.

Once the garlic is lightly browned, add the zoodles into the pan. Toss the zucchini noodles in the garlic butter over medium heat. You’ll only want to cook the noodles for a couple of minutes. If you overcook a zucchini noodles recipe the noodles can get soggy.

While you toss the zoodles, add salt and pepper to taste. If you like your veggies with a little kick, sprinkle on a few red pepper flakes as well. Then serve with your favorite recipes.

The Buttery Zucchini Noodles Wrap Up

A good way to stick to keto is with simple recipes made from whole foods. Keep healthy recipes like this buttery zoodles recipe in your rotation to help you lose weight on a low carb diet.

The great thing about a recipe like this is it’s easy to dress buttery zoodles up with low carb marinara sauce and parmesan cheese. Of course you should also add a protein like ground beef or chicken to make up a complete keto meal. Sweet and spicy spaghetti sauce is a great option over zoodles.

My favorite recipe that’s really low in grams of net carbs is to serve buttery zoodles with sesame ginger beef. The entire meal is ready in less than 15 minutes!

Ingredients

Scale
  • 1 large zucchini
  • 2 tablespoons butter
  • 1–2 tsp minced garlic
  • Salt and pepper to taste

Instructions

  • Using a spiralizer, slice zucchini into zoodles (like spaghetti noodles)
  • Heat butter over medium heat in pan. Add in the minced garlic while the butter melts. Cook garlic until lightly browned, which should take 1-2 minutes.
  • Once butter is melted and garlic is browned, saute zoodles for approximately 2 minutes. Do not overcook, as zoodles will become soggy.
  • Sprinkle it with salt and pepper while cooking.
  • Pour leftover garlic butter over zoodles when serving.
